May Tang Chu

May Tang Chu died peacefully at home Aug. 23, 2018. Born on March 24, 1932, and raised in Hong Kong, she was the third of four children. She opened Mekong Restaurant (later changed to May Kong) with her husband Kirby K.P. Chu in Daly City specializing in Szechuan and Hunan cuisine. After her husband’s death, she remained vibrant and active with friends, enjoyed afternoon tea and volunteered in the local community with CCWA (Chinese Consolidated Women’s Association). 

She was preceded in death by her son David P. Chu, and husband Kirby K.P. Chu. She is survived by family members all over the world and her daughters: Sylvia Chu (Brendan), Rolanda Chu (Zac) and granddaughter Himalaya Chu Holtzman.
