Each of these two tasty recipes produces a chicken main dish for four people in around 20 minutes. One secret to their success is the imaginative combination of standard barbecue sauce with a handful of other ingredients.
The Honey Mustard Stir Fry Chicken recipe includes couscous; rice is suggested as an accompaniment for the Weeknight Chicken, which is seasoned with Worcestershire sauce, among other extras. Both dishes are cooked in one large nonstick skillet, leaving the cook with minimal cleanup.
Honey Mustard BBQ Chicken Stir-Fry
(Preparation 10 minutes, cooking times 10 minutes)
10-ounce box couscous pasta
1 pound boneless, skinless chicken, cut into strips
1 tablespoon cooking oil
1 red bell pepper, cut into thin strips
1 onion, sliced
1/3 cup honey mustard
1/3 cup barbecue sauce
Prepare couscous according to package directions. Keep warm. Heat oil in large nonstick skillet over high heat. Stir-fry chicken for 5 minutes until well browned. Transfer to bowl. In the same skillet, stir-fry bell pepper and onion strips for 3 minutes until crisp-tender. Return chicken to the skillet. Stir in 2/3 cup of water, mustard and barbecue sauce. Heat to boiling, stirring often. Serve over couscous. Makes 4 servings.
Heat oil in a large nonstick skillet over medium-high heat. Cook chicken for 5 minutes until chicken is no longer pink in center. Remove chicken to serving platter; keep warm.
In the same skillet, saute onion and mushrooms for 5 minutes until mushrooms are golden brown and no liquid remains. Return chicken to skillet.
Combine barbecue sauce, honey and Worcestershire sauce; pour into skillet. Bring to a full boil. Reduce heat and cook 2 to 3 minutes until sauce thickens slightly, stirring occasionally. Serve with hot cooked rice, if desired.
